Why are dairy products usually at the back of a grocery store?Milk is one of the most commonly purchased groceries, yet it’s located farthest from the front. Why?
Most of the grocery stores we frequent have intentionally designed their layouts to serve a purpose: to entice consumers to spend, spend, spend. Everything from lighting to scent and product placement affects how we spend our money.
For instance, stocking sugary sweets at kids’ eye level, staging irresistible baked goods near the entrance, and putting meats and dairy products at the back are all intentional strategies. Folks end up lugging their gallon past dozens of eye-catching products before making it to the counter, and usually, an eye-catcher (or two) ends up in their basket as a result.
While clever marketing techniques are undoubtedly used, some argue that the reasons aren’t always so deceptive. Michael Pollan, author of The Omnivore's Dilemma, suggested in a 2014 interview with NPR that it speaks more to logistics and efficiency than overt manipulation.
Pollan thinks the cold chain has a lot to do with supermarket layout, too. The cold chain refers to the process of maintaining refrigeration for foods such as meat and dairy at every stage of transportation. As delivery trucks generally unload at the back of a building, having the store’s refrigeration units near that area would make sense.
Nevertheless, being aware of the temptations on the way can help you curb all that impulse buying and overspending at the register.

In 1975, a San Diego homemaker named Marjorie Rice came across a column in Scientific American about tiling (瓷砖), a problem that has interested mathematicians since ancient Greek times. After Rice's chance encounter with tilings, family members often saw her in the kitchen constantly drawing shapes. "I thought she was just drawing casually," her daughter Kathy said. But Rice, who took only one year of math in high school, was actually discovering never-before-seen patterns.
Born in Florida, Rice went to a one-room country school where she skipped two grades and studied with the older kids. Lacking a mathematical background, I developed my own symbol system and in a few months discovered a new type."
Astonished and delighted, she sent her work to Gardner, who sent it to Doris, a tiling expert at Moravian College. Doris confirmed that Rice's finding was correct.
Rice declined to lecture on her discoveries, citing shyness, but at Doris's invitation, she attended a university mathematics meeting, where she was introduced to the audience. Rice still said nothing of her achievements to her children, but they eventually found out as the number of awards at home increased.
